The Perfect Ace recipe: Beef stew and dumplings

In the last episode of The Perfect Ace, chef Nti met with Nonhlanhla Nxumalo who made a special meal for her mom and sisters as a thank you for everything they’ve done for her.

Pap squares topped with creamed spinach

1 and ½ cups of Ace Super Maize Meal Quick cook
4 cups of water
Oil for frying
And a ¼ cup of grated parmesan or cheddar cheese
For the topping we need
3 tablespoons of butter or margarine
1 chopped onion,
150g of sliced button mushrooms
A bunch of chopped spinach
Salt and pepper to taste
And 1 cup of cream

Bring water to the boil, add salt to taste, gradually stir in Ace Super maize meal. Stir until well mixed, cover and simmer over gentle heat for 4 minutes, stirring occasionally.
Spoon mixture into a greased, shallow baking tray. Allow to cool and set, at least 1 hour.
Cut pap into squares and shallow fry in hot oil. Drain on a kitchen paper and arrange on a serving platter.
To make topping; melt butter in a large pan, sauté onions until transparent, add mushroom and spinach, stir fry over gentle heat until spinach has wilted and mushrooms are soft. Season to taste and add cream, cook for a further 5 minutes.
Spoon spinach mixture over maize meal squares and sprinkle with grated cheese.

Beef stew and dumplings

3tbsp of oil
1 sliced onion
A kg stewing beef
4 peeled and diced tomatoes
2tsp of cayenne pepper a half ½ a tsp of mixed dry herbs
1pkt of brown Onion Soup, dissolved in 2 and ½ cups of water
Salt and pepper to taste

For the Dumplings we’ll use:
1 cup of Golden Cloud Self raising flour ½ a cup of Ace Super Maize meal quick cook
1 tablespoon of chopped fresh parsley
50g margarine
Salt to taste
And Water

Heat oil and sauté onion and meat until meat has browned.
Add tomatoes, paprika and mixed herbs, cook for 5 minutes.
Add brown onion Soup, check seasoning, bring to the boil, simmer gently for 1 hour or until meat is tender.
To make dumplings: Rub margarine into self-raising flour and Ace super maize meal until it resembles bread crumbs, add herbs and enough water to form a stiff dough.
Divide into 8 dumplings, drop dumplings into stew about 30 minutes before end of cooking time. Cover and cook until fluffy and cooked.

Coconut Scones

250ml (1 cup) ACE SUPER MAIZE MEAL
500ml (2 cups) cake flour
3ml (½ teaspoon) salt
20ml (4 teaspoons) baking powder
120g butter or margarine
180ml (¾ cup) sugar
125ml (½ cup) desiccated coconut
2 eggs, beaten
125ml (½ cup) butter milk

Preheat oven to 200 degrees C. Grease a baking tray.
Sift together all the dry ingredients. Rub in the butter until mixture resembles fine crumbs.
Add sugar and coconut make a well in the centre and pour in the beaten egg and buttermilk. Mix to a soft dough.
Turn out onto a floured surface and roll out to 12mm thickness. Cut into desired shapes, brush with a mixture of egg and milk and bake for 10 – 12 minutes until golden brown.

Serve these with Jam and cream.
